A traditional Irish soda bread with a tender interior and rustic crust. Made with buttermilk, baking soda, and optional raisins for a touch of sweetness. Perfect for pairing with soups or spreads.
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups buttermilk
1/2 cup raisins (optional)
Preheat oven to 400°F (200°C)
In a large bowl, whisk together flour, baking soda, and salt
Mix in buttermilk until a shaggy dough forms
Knead the dough gently on a floured surface into a round loaf
Cut an X on the top of the loaf
Place on a baking sheet and bake for 35-40 minutes, until golden brown and hollow when tapped
For a nutty flavor, use whole wheat flour in place of all-purpose.
If without buttermilk, substitute 1 1/2 cups milk plus 1 1/2 tablespoons lemon juice.
Store in an airtight container for up to 3 days.
Bake for 10-15 minutes longer if using a cast iron skillet for better crust development.
