A colorful and festive cake perfect for 4th of July celebrations, decorated with fresh berries to resemble the American flag.

Ingredients

Scale
  • 1 baked and cooled quarter sheet cake (such as vanilla sheet cake)
  • 1 cup (226g) unsalted butter, softened to room temperature
  • 4 and 1/2 cups (540g) confectioners’ sugar
  • 1/3 cup (80ml) heavy cream
  • 2 teaspoons pure vanilla extract
  • Salt, to taste
  • 1/2 cup (70g) fresh blueberries
  • 23 cups (380–560g) halved fresh strawberries

Instructions

  1. Bake the Cake: Start by baking and cooling a quarter-sheet cake (about 9×13 inches) in your favorite flavor, preferably vanilla. Follow the baking instructions for best results.
  2. Make the Frosting: Using a mixer, beat the softened butter on medium for 2 minutes until creamy. Gradually add confectioners’ sugar, heavy cream, and vanilla, mixing first on low then on medium-high for 4 minutes. Adjust thickness with more sugar or cream as needed.
  3. Frost the Cake: Once fluffy, spread about 2/3 of the frosting evenly on the cooled cake using an offset spatula.
  4. Decorate: Position blueberries for stars and halved strawberries for stripes, creating the American flag design.
  5. Piping Detail: Use piping bags to fill spaces between decorations. The Ateco 32 tip works for blueberries and the Ateco 844 for strawberries.
  6. Serve: Slice and serve chilled to family and friends, storing leftovers tightly covered in the refrigerator for up to 5 days.

Notes

Best served chilled on a hot summer day. Pairs well with cold beverages like lemonade or iced tea.
