A fun, colorful, and nutritious dish that works great as a dip or salad, packed with fresh veggies and proteins.

Ingredients

  • 2 diced bell peppers (use red, yellow, or orange; or add green)
  • 1/2 large red onion (diced)
  • 2 medium cucumbers (diced)
  • 15 cherry tomatoes (cut in slices)
  • 2 red or green jalapeños (diced; remove seeds for less heat)
  • 4 ears of corn (cut off the cob)
  • 1 large handful of fresh cilantro (chopped)
  • 1 can of chickpeas (drained and rinsed)
  • 1 can of black beans (drained and rinsed)
  • 1 cup of feta cheese
  • 2 large limes (juiced)
  • 1/4 cup of olive oil
  • 2 tsp of pink salt or sea salt
  • 1 tsp of black pepper
  • 2 tbsp of apple cider vinegar
  • 2 tsp of honey

Instructions

  1. Dice the bell peppers into small chunks and put them in a large bowl.
  2. Dice the cucumbers and red onion, then add them to the bowl.
  3. Slice the cherry tomatoes into small pieces and add them to the bowl.
  4. Chop the jalapeños into small chunks and add them to the bowl, removing seeds for less heat.
  5. Cut the corn off the cob and add it to the bowl.
  6. Chop the cilantro well and add it to the bowl.
  7. Drain and rinse the chickpeas and black beans, then add them to the bowl.
  8. Add in the feta cheese.
  9. Mix together the lime juice, olive oil, pink salt, black pepper, apple cider vinegar, and honey in a separate bowl. Pour this dressing over the salad and mix everything well.

Notes

Serve chilled or at room temperature. The flavors improve after marinating for at least an hour.
