A vibrant and refreshing pasta salad with fresh vegetables, feta cheese, and Italian dressing, perfect for any occasion.

Ingredients

  • 1 box (12 oz) tricolor rotini pasta
  • 1 cup chopped cucumber (peeled and seeded)
  • 1 cup halved cherry tomatoes
  • 1 cup crumbled feta cheese
  • 1 can (2.25 oz) sliced black olives (drained)
  • 1/4 cup finely diced red onion
  • 1/21 cup Italian salad dressing

Instructions

  1. Cook the pasta according to the package instructions, adding 1-2 teaspoons of salt to the boiling water for flavor.
  2. Drain the pasta in a colander and rinse under cold water to cool it down.
  3. Add the cooled pasta, diced cucumber, halved tomatoes, crumbled feta, drained olives, and finely diced red onion to a large mixing bowl.
  4. Pour the Italian salad dressing over the mixture. Start with 1/2 cup and mix gently. Add more dressing as needed.
  5. Serve immediately or chill in the fridge for 2-4 hours before serving for enhanced flavors.

Notes

Best enjoyed cold. Store leftovers in an airtight container for 3-4 days.
