Easy herby lemon skewers featuring chicken marinated in a flavorful mix of lemon, herbs, and garlic. Perfect for grilling season!

Ingredients

  • ¼ cup olive oil
  • ¼ cup lemon juice
  • Zest of 1 lemon
  • 23 garlic cloves (crushed)
  • 2 tsp fresh thyme
  • 2 tsp rosemary
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 4 large chicken breasts (skinless, boneless)
  • Wooden skewers (soaked in boiling water for 30 minutes)

Instructions

  1. Combine all the ingredients for the marinade in a bowl.
  2. Slice the chicken into bite-sized chunks and place them in a separate bowl.
  3. Pour the marinade over the chicken, cover it, and let it sit in the fridge for at least 30 minutes, or up to 24 hours for maximum flavor.
  4. After marinating, thread the chicken onto soaked wooden skewers or metal skewers.
  5. Heat an outdoor grill or stovetop grill pan. Cook the skewers, turning every 3-5 minutes until the chicken is cooked through and golden brown on all sides.
  6. Remove from the heat and let the skewers rest for 5 minutes before serving.

Notes

For best results, marinate the chicken longer for deeper flavors. Feel free to mix in other herbs or add vegetables to the skewers.
