  • 2 cups orzo (uncooked)
  • 1 red bell pepper, chopped
  • 1 English cucumber, chopped
  • 1/2 red onion, small diced
  • 6 oz. feta cheese, crumbled
  • 23 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • Juice and zest of 1 lemon (1.5-2 oz juice)
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cracked pepper

Instructions

  1. Begin by cooking the orzo according to the package instructions until al dente.
  2. While the orzo is cooking, chop and prepare all your vegetables.
  3. Once the orzo is ready, drain and rinse it thoroughly with cold water.
  4. In a large bowl, combine the cooled orzo with the chopped vegetables, minced garlic, herbs, lemon juice, zest, olive oil, honey, salt, and pepper.
  5. Toss the salad until everything is evenly combined.
  6. Finally, fold in the crumbled feta cheese gently.
  7. Chill the salad in the fridge until ready to serve.

Notes

Letting the salad chill for at least 30 minutes allows the flavors to meld together nicely. Consider adding the feta just before serving.
