Ingredients

1 pound rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell peppers, chopped

1/2 cup red onion, thinly sliced

1 cup cheddar cheese cubes

1/2 cup black olives, sliced

1/4 cup chopped parsley

3/4 cup mayonnaise

1/4 cup sour cream

2 tablespoons olive oil

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

Instructions

1. Bring salted water to a boil and cook rotini pasta until tender.

2. Drain pasta and rinse under cold water.

3. Allow pasta to cool completely.

4. Chop tomatoes, cucumber, peppers, and onion.

5. Slice olives and cube cheddar cheese.

6. Whisk mayonnaise, sour cream, olive oil, Dijon mustard, lemon juice, garlic powder, Italian seasoning, salt, and pepper.

7. Combine pasta, vegetables, cheese, olives, and parsley in a large bowl.

8. Pour dressing over salad and toss evenly.

9. Refrigerate for at least 1 hour before serving.

Notes

Chill the pasta salad before serving for best flavor.

Reserve a little extra dressing to refresh leftovers if needed.
