Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound 93% lean ground turkey
  • ½ cup yellow onion (finely chopped)
  • ¼ cup BBQ sauce
  • 2 teaspoons Dijon mustard
  • 1 ½ teaspoons Kickin’ Cajun Seasoning Mix
  • 12 dinner rolls (brioche style or sweet Hawaiian)
  • ⅓ cup mayonnaise (regular or light)
  • 1 tablespoon Sriracha sauce (or to taste)
  • 2 cups shredded cheese (divided)
  • 2 teaspoons melted butter
  • 1 teaspoon everything bagel seasoning

Instructions

  1. Warm the olive oil in a large nonstick skillet over medium heat.
  2. Add the ground turkey and chopped onion; cook, breaking the turkey into small pieces until no longer pink, about 5 minutes.
  3. Pour off any excess grease, then return to heat and add BBQ sauce, Dijon mustard, and Cajun seasoning; stir well.
  4. Reduce heat to low and cook for another 1-2 minutes, stirring occasionally; remove from heat.
  5. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  6. Separate the rolls using a serrated knife and place the bottom halves on the baking sheet.
  7. Mix mayonnaise and Sriracha in a small bowl; spread on the cut sides of the bottom rolls and sprinkle with half of the cheese.
  8. Layer the meat mixture on top of the cheese, then add the remaining cheese.
  9. Cover with the top halves of the rolls.
  10. Brush the tops with melted butter and sprinkle with everything bagel seasoning.
  11. Bake until the cheese melts and tops are golden, about 10 minutes.
  12. Remove from the oven, let rest for a couple of minutes, then slice and serve warm.
