1 lb. chicken breast (thighs optional)
3 bell peppers, any color
2 small yellow onions
2 Tbsp cooking oil (avocado or olive)
1 Tbsp chili powder
1/2 Tbsp paprika
1/2 tsp onion powder
1/4 tsp garlic powder
1/4 tsp cumin
1/8 tsp cayenne pepper (optional)
1 tsp sugar
1/2 tsp salt
1 lime (juice and wedges)
8 6-inch tortillas
1/2 cup sour cream (optional, or Greek yogurt)
1/4 bunch cilantro (optional, or parsley)
Preheat oven to 400°F (200°C)
Combine chili powder, paprika, onion powder, garlic powder, cumin, cayenne, sugar, and salt in a small bowl
Place chicken and vegetables on a baking sheet
Whisk lime juice with oil and brush over chicken and vegetables
Sprinkle spice mix evenly over all ingredients
Roast for 30-35 minutes, flipping halfway through cooking time
Let rest 5-10 minutes before serving
Use chicken thighs for richer flavor
Tortillas can be warmed in oven or microwave
Cayenne can be omitted for milder heat
Serve with rice, guac, or queso for full meal
