A colorful and delicious pasta salad perfect for parties and gatherings, easy to prepare ahead of time.

Ingredients

  • 4 pounds multi-colored rotini pasta
  • 64 ounces Italian dressing
  • 2 teaspoons Kosher salt
  • 1 teaspoon black pepper
  • 32 ounces mozzarella cheese (cut in small cubes)
  • 40 ounces cherry tomatoes (cut in half)
  • 3 green bell peppers (diced)
  • 3 red bell peppers (diced)
  • 36 ounces sliced black olives (drained)

Instructions

  1. Start by cooking half of the rotini pasta according to the package instructions until al dente. Drain and rinse with cold water.
  2. Place half of the cooled pasta in a very large bowl.
  3. Pour 32 ounces of Italian dressing over the pasta.
  4. Sprinkle 2 teaspoons of Kosher salt and 1 teaspoon of black pepper on top, and stir well.
  5. Add the remaining ingredients: mozzarella cheese, halved cherry tomatoes, diced green and red bell peppers, and black olives. Mix gently.
  6. Pour the pasta salad into large foil pans and cover with foil or plastic wrap.
  7. Store the pasta salad in the refrigerator until ready to serve.

Notes

Make it a day in advance for better flavor. Customize with your favorite ingredients or dressings.
