21 wooden skewers
2 cups (284 grams / 10 oz) strawberries – cut into halves or quarters
21 goldenberries or 2–3 clementines
1 small pineapple – cut into bite-sized cubes
21 kiwi chunks or 21 (53 grams or 1/3 cup) green grapes (2 kiwi should be enough)
42 blueberries
21 purple grapes
4 ounces (112 grams) cream cheese, room temperature
6 tablespoons (75 grams) powdered sugar or 3 tablespoons (60 grams) honey or maple syrup
1/2 teaspoon vanilla extract
1/16 teaspoon salt
1/2 cup (120 ml) cold heavy cream
Instructions
Prepare the Fruits: Start by gathering your fruits. Wash all fruits thoroughly. Cut the strawberries in halves or quarters, and chop the pineapple into small cubes. If using kiwi, cut them into chunks, similar in size to the pineapple. You can use green grapes instead of kiwi if you prefer.
Make the Dip: Chill your mixing bowl, beaters, and all applicable utensils in the refrigerator for about an hour. In a bowl, mix the cream cheese and sugar (or honey/maple syrup). Add in the vanilla extract and salt. Blend well until smooth. Slowly add the cold heavy cream and continue to beat until thicken and creamy.
Assemble the Skewers: Take the wooden skewers and start layering the fruits in your preferred order. Aim for about 5-6 pieces of fruit on each skewer.
Serve Fresh: Once all the skewers are made, serve them with your cream cheese dip on the side.
