2 lbs asparagus
1 lemon
4 Tbsp unsalted butter
1 Tbsp olive oil
1 tsp sea salt
1/2 tsp black pepper
1/2 cup Parmesan cheese
Preheat oven to 425°F (220°C)
Wash and dry asparagus spears, snapping off woody ends
Pat spears dry with a clean towel
Place asparagus in a single layer on a baking sheet
Drizzle with olive oil and salt
Roast for 5 minutes
Remove tray and add butter pats to warm
Brush melted butter over warm asparagus
Liberally season with black pepper
Return to oven and roast 5-7 minutes until tender-crisp
Immediately sprinkle with freshly grated Parmesan and finish under the broiler for 1-2 minutes until golden
Use a baking sheet with raised edges for even roasting
For golden bottoms, arrange asparagus on a wire rack over the baking sheet
Store leftovers refrigerated for up to 3 days
