A refreshing and vibrant fruit salad made with watermelon, strawberries, cherries, blueberries, and raspberries, topped with a minty lime dressing.

Ingredients

  • 2 Tablespoons fresh mint (sliced thinly or minced)
  • 1 Tablespoon honey or agave
  • Zest of 1 lime (about 2 teaspoons)
  • Juice of 1 lime (about 2 Tablespoons)
  • 5 cups diced watermelon (cut into a 3/4-1″ dice)
  • 2 cups sliced or halved strawberries
  • 1 cup pitted (halved cherries)
  • 1 cup blueberries
  • 1 cup raspberries (or more cherries or blueberries)
  • Extra fresh mint (for garnish)

Instructions

  1. Mix up the dressing: In a jar or small bowl, combine the fresh mint, honey or agave, lime zest, and lime juice. Whisk together until well-mixed.
  2. Assemble your salad: In a large bowl, combine the diced watermelon, strawberries, cherries, blueberries, and raspberries. Ensure even distribution of fruits.
  3. Drizzle with dressing: Pour the mint-lime dressing over the fresh fruit in the bowl and gently stir to coat without crushing the berries.
  4. Garnish with fresh mint: Add a few mint leaves or create a chiffonade of fresh mint to garnish the salad.

Notes

Serve chilled for best flavor. Consider serving in a hollowed-out watermelon for a fun presentation. Store dressing separately to keep the fruit crisp.
