A delightful summer salad that combines sweet watermelon, creamy feta, fresh mint, and a homemade balsamic syrup for a refreshing taste.

Ingredients

  • 2/3 cup balsamic vinegar
  • 1 tablespoon sugar
  • 1 (7-to 8-pound) watermelon
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1/4 cup fresh mint leaves, chopped
  • 2/3 cup crumbled feta cheese

Instructions

  1. Combine balsamic vinegar and sugar in a small saucepan over medium-high heat. Bring to a boil and cook until syrup-like, about 5 minutes. Set aside to cool.
  2. Cut the watermelon into cubes or use a melon baller to scoop into balls. Place in a large bowl.
  3. Whisk together lime juice, olive oil, and a pinch of salt and pepper. Pour over watermelon.
  4. Add chopped mint leaves and crumbled feta cheese. Toss gently to combine.
  5. Drizzle with balasmic syrup before serving. Enjoy immediately!

Notes

Best served chilled. Store leftovers separately from the syrup to maintain freshness.
