Delicious and simple herby lemon skewers featuring juicy chicken, fresh herbs, and zesty lemon.

Ingredients

  • ¼ cup olive oil
  • ¼ cup lemon juice
  • Zest of 1 lemon
  • 23 garlic cloves (crushed)
  • 2 tsp fresh thyme
  • 2 tsp rosemary
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 4 large chicken breasts (skinless, boneless)
  • Wooden skewers (soaked in boiling water for 30 minutes)

Instructions

  1. Combine all the ingredients for the marinade in a bowl.
  2. Slice the chicken into bite-sized chunks and place them in a separate bowl. Pour the marinade over the chicken, cover, and let it marinate for at least 30 minutes, or up to 24 hours in the refrigerator.
  3. Thread the marinated chicken onto the soaked wooden skewers or metal skewers.
  4. Heat an outdoor grill or stovetop grill pan. Cook the skewers, turning them every 3-5 minutes, until the chicken is cooked through and golden brown on all sides.
  5. Remove the skewers from the heat and let them rest for 5 minutes before serving.

Notes

Great with a fresh salad, rice, or grilled vegetables. Store leftovers in an airtight container in the refrigerator for 2-3 days.
