Delightful chicken skewers marinated in a sweet and savory honey garlic sauce, perfect for grilling.

Ingredients

Scale
  • 1 tbsp avocado oil
  • 1 tbsp sesame oil
  • 2 cloves garlic, peeled and minced
  • 1 tsp minced ginger
  • 3 tbsp dark soy sauce
  • 3 tbsp honey
  • 2 chicken breasts, chopped into bite-sized pieces (approx 350g)
  • 1 red bell pepper, chopped into large chunks
  • 1 onion, peeled and sliced into squares
  • 1 tbsp sesame seeds
  • Small bunch of coriander/cilantro, roughly torn

Instructions

  1. Mix all the marinade ingredients together in a small bowl.
  2. Place the chicken in a bowl and pour on three-quarters of the marinade, saving the rest for brushing during cooking. Cover and refrigerate for 1 hour.
  3. Soak your skewers if they are wooden to prevent burning, or use metal skewers.
  4. Heat your BBQ or griddle until it’s very hot.
  5. Thread a piece of chicken onto a skewer, followed by a chunk of red pepper, then another piece of chicken, and a slice of onion. Repeat until all chicken and skewers are used, discarding remaining marinade.
  6. Place the skewers on the BBQ or griddle and cook for 8-10 minutes until cooked through, turning 3-4 times and brushing with reserved marinade halfway through.
  7. Check if chicken is cooked by slicing open the largest piece to ensure no pink remains.
  8. Sprinkle with sesame seeds and coriander before serving with salad and rice or potatoes.

Notes

For extra flavor, marinade overnight if possible. Substitute chicken with shrimp, tofu, or beef for variations. Add red pepper flakes for heat.
