Colorful and healthy Rainbow Fruit Skewers perfect for any occasion, served with a creamy dip.

  • 21 wooden skewers
  • 2 cups (284 grams / 10 oz) strawberries, cut into halves or quarters
  • 21 goldenberries or 23 clementines, peeled
  • 1 small pineapple, cut into bite-sized cubes
  • 21 kiwi chunks (cut the same size as the pineapple) or 21 (53 grams or 1/3 cup) green grapes
  • 42 blueberries
  • 21 purple grapes
  • 4 ounces (112 grams) cream cheese, room temperature
  • 6 tablespoons (75 grams) powdered sugar or 3 tablespoons (60 grams) honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/16 teaspoon salt
  • 1/2 cup (120 ml) cold heavy cream

Instructions

  1. Prepare the Fruits: Gather the smallest container of each fruit. The amounts above yield 21 skewers.
  2. Make the Dip: Chill beaters and mixing bowl in the fridge for 1 hour. In a mixing bowl, combine cream cheese, powdered sugar (or honey/maple syrup), vanilla extract, and salt. Mix until smooth. Fold in the cold heavy cream until fully combined.
  3. Make the Skewers: Assemble on each skewer in this order: strawberry, goldenberry (or clementine), pineapple, kiwi (or green grape), blueberry, and purple grape. Repeat until filled, leaving space at the bottom for holding.

Notes

Best enjoyed fresh, but can be stored in the refrigerator for 1-2 days. Use ripe fruits for better flavor and presentation.
